Loaded cornbread casserole
Ingredients
- 1 1/4 cup corn meal
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 stick melted butter
- 1 cup milk
- 4 eggs, lightly beaten 2 cans creamed corn
- 1 or 2 jalapeños thinly sliced
- 1/2 cup grated cheddar cheese
- 2 slices bacon, cooked and crumbled
Directions
In a bowl, combine the dry ingredients, then add the butter, milk and eggs. Mix well. Add the corn and mix well. Add the jalapeños and cheese, reserving a little of each to garnish the top. Add the bacon and mix well. Pour into a greased pan and bake at 350 degrees for about an hour. Serve warm or at room temperature.
Makes 6 servings.
